I’ve been crazy busy with work (#startuplife) and about a gazillion other projects. I haven’t properly slept in weeks and I feel like despite working out regularly and definitely eating enough, I haven’t been making much of a progress what comes to feeling healthy and strong. I gotta feeling this is because I haven’t really been able to chill and let myself recover.

But today I’ve felt like some serious recovery has been done – and I’m quite sure I’ll continue doing this in the future. I whipped up a batch of delicious chocolate with salted pistachios, grabbed a blanket and a good book and just let myself be.

And now I’m wondering, how come did it take so long for me to do this?

Raw Chocolate Bark w/ Salted Pistachios - Feel Good KitchenWe all know by now that dark chocolate is good for us. And it’s not just a fad – it actually is, scientifically proven and all.

Today’s recipe is the perhaps the simplest ever, and good news for the lazy friends of mine: it can be made even simpler. See, I made the raw chocolate from scratch and while that is quite a no-brainer and takes around 15 minutes, you can also use regular dark vegan chocolate, melt it and top with crushed pistachio nuts.

As you may have figured out, I enjoyed my chocolate bark all by myself and I. But this would also be perfect to bring along to a dinner party or as a gift for someone special (and chocolate-loving).

Raw Chocolate Bark w/ Salted Pistachios

  • 1dl of melted coconut oil
  • 0,7dl of dark cocoa powder
  • 0,5dl maple syrup
  • A handful of peeled pistachio nuts
  • Pinch of salt
  • Pinch of vanilla

Crush the pistachios to chunky pieces. Mix the coconut oil with the maple syrup and add in the cocoa powder along with the spices. Stir carefully until fully combined.

Cover a medium sized baking mold/tin with baking paper (I used a 25cm x 10cm square cake tin) and pour the mixture into it evenly. Sprinkle pistachio crumbles on top and freeze for at least 20 minutes. After this, you’re ready to cuddle up and enjoy it!

Note: The raw chocolate will melt fast at room temperature, so it is advisable to store it in a cool place like a fridge.
