Fresh mint pesto is perfect for the sunny spring days!

I’m head over heels in love with different kinds of vegan pestos and spreads. Here in Finland you can buy them from nearly every supermarket (vegan arrabiata pesto has saved me from a boring meal countless times!).  Pestos are great for everyday use since they’re so versatile. I like to add them to plates of pasta, pizzas, breads and salads. They’re also great mixed with some cooked beans: for example, green pesto + white bean spread is so simple yet amazing.

Sweet potato smash + spicy chickpeas + sesame kale

It’s now been pretty much exactly two years since I went plant-based. I remember back then everything was so new and exciting. I had so many things to learn and with some things I struggled more than others; a great example being simple everyday meals!

As a carnivore, I felt like I had a million options. And especially when I had just stopped using eggs, dairy and meat products I felt like I just simply couldn’t have as much variety on a plant-based diet. How do I replace my quick afternoon omelets? Video: What I Ate In A Day

Lately I’ve found myself lost in YouTube videos. I’ve never really been much into tv series (it’s seriously difficult to get me hooked on anything with the exception of Breaking Bad!) but YouTube — food related videos specifically — are my soft spot. Especially What I Eat In a Day -type of videos keep me clicking like a maniac.

I love seeing how differently people eat and live, especially on a plant-based diet. It’s really easy to get stuck with your own routines and ways of cooking and eating. Food videos are a great source of inspiration and just by watching them you’ll feel rich in new ideas. If anyone ever suspects that plant-based food is boring or “always the same thing” just tell them to hit YouTube. World will never look the same again.

Lately I’ve been super drawn into quick & easy recipes. And what would be quicker OR easier than a three-ingredient-only chickpea flour pizza crust, topped with whatever-I-happen-to-have?

Whoever claims that healthy pizzas are as nonexistent as unicorns is utterly wrong. Pizza base can be made with multiple, healthy ingredients that don’t hurt the taste of it at all. One of my all time healthy pizza base favorites is this gluten-free quinoa pizza base, but this one that I’m about to introduce you today, is EVEN easier.
